THE STORY OF THE DESI BLEND
Always Serving Authenticity
The concept of "The Desi Blend" hit Vimala when she was pursuing her degree in Baking and Pastry Arts at the Niagara College. After earning her Diploma de Patisserie from Le Cordon Bleu, Ottawa, Vimala wanted to expand and further hone the art of pastry making, and combine it with her existing talent and knowledge of Indian cuisines.
"I wished to blend the two sides of my culinary prowess - hence the desi blend!"
Which is why, in this venture she wishes to make everything from mulagaipodi to mille feuille, and maybe bring these two seemingly opposite culinary worlds together in some fusion dishes in the future!
